Head Chef - Harry O's BBQ

Head Chef at Harry O's is a full-time permanent position based at The American Hotel Echuca, running the kitchen whilst working in conjunction with Executive Chef, Ron O'Bryan and the Head Chef American Hotel.  Occasionally assisting the American Hotel kitchen and events, The Head Chef will be responsible for delivering outstanding, consistent food and helping develop and grow the Harry O's brand.

Launched in 2021 and specialising in authentic "low’n'slow" American BBQ, Harry O's aims to deliver an outstanding and unique dining experience focusing on ethically sourced and sustainable meat and the best local produce the Murray River region has to offer.

What are we looking for?

  • Experience as a Head or Sous Chef preferred
  • Previous experience in both quality and high-volume environments
  • Previous experience staff management, menu planning, costing
  • The successful candidate will need to work nights and weekends as required
  • A passion for smoking and slow cooking
  • COVID-19 Double Vaccination Status Required

What will the Head Chef do?

  • Assist the Executive Chef in the operational running of the kitchen
  • Hands-on delivery of kitchen objectives, including meeting agreed food and wage cost targets
  • Assist in creating and developing menus, specials and functions
  • Maintain kitchen equipment
  • Maintain a high level of presentation, cleanliness and hygiene at all times
  • Oversee the appropriate receiving, storage and rotation of food
  • Assist with staff recruitment, rosters, supervision, communication, meetings, training
